Sparkling Blood Orange Lemonade

Ingredients

1½ cup granulated white sugar
rind of 1 lemon
rind of 1 blood orange
1½ cup water
3/4 cup lemon juice (freshly squeezed, strained of pulp)
3/4 cup blood orange juice (freshly squeezed, strained of pulp)
750 ml sparkling water (or more as needed (I like Topo Chico))

Instructions

MAKE THE CITRUS SYRUP:

In a saucepan add sugar, the lemon and blood orange rinds and 1½ cups water. Stir and bring to a low boil over medium to medium high heat. Continue to stir until all of the sugar has dissolved. Transfer to a clean container and allow to cool completely.

MAKE THE LEMONADE:

In a large pitcher, add the lemon juice, blood orange juice, all of the citrus syrup and 4 cups cold water. Stir to combine and chill until ready to serve.

Fill a glass or jar to the top with ice. Fill the glass 3/4 of the way with the lemonade and top off with the Topo Chico.
