Ingredients

2 large ripe tomatoes ((or 1 pint cherry tomatoes), chopped)
1 large English cucumber (sliced thin)
¼ red onion (thinly sliced)
2 tablespoons olive oil (extra virgin)
1 tablespoon red wine vinegar (or lemon juice)
1 tablespoon fresh oregano (1 teaspoon dried oregano)
salt & pepper (to taste)
2 tablespoons fresh basil or parsley (chopped)

Instructions

In a large bowl, combine tomatoes, cucumber, and red onion.

Drizzle with olive oil and red wine vinegar.

Sprinkle with oregano, salt, and pepper.

Toss gently to coat the vegetables.

Let the salad sit for 1015 minutes to allow flavors to meld (optional, but recommended).

Garnish with fresh herbs if using. Serve immediately.
