Ingredients

4 cups baby arugula (washed and dried)
cup Parmesan cheese (shaved)
2 tablespoons olive oil (extra virgin)
1 tablespoon fresh lemon juice (or balsamic vinegar for sweeter touch)
salt & freshly ground pepper (to taste)

Instructions

In a large bowl, place the arugula.

In a small bowl, whisk together the olive oil and lemon juice. Season with a pinch of salt and black pepper.

Drizzle the dressing over the arugula and gently toss until evenly coated.

Top with shaved Parmesan and any optional add-ins you like.

Serve immediately.
