Chicken Shawarma Bowls

Ingredients

1/4 cup Greek yogurt
1 Tbsp onion
3 garlic cloves
1/2 tsp black pepper
3/4 tsp salt
1/4 tsp cayenne
2 tsp cumin
1/2 tsp coriander
1 1/2 tsp paprika
1/4 cup olive oil
2 lb boneless skinless chicken thighs
Mini pita bread
romaine lettuce (chopped)
red onion (chopped)
tomatoes (sliced,)
cucumber (sliced)
Greek yogurt sauce or tzatziki
Feta cheese (crumbled)

Instructions

Place all of the chicken marinade ingredients into a large bowl.

Use a whisk to mix everything together well.

Now, add in the chicken thighs and use your clean hands to mix the marinate into the chicken.

Let it marinate for about 1-2 hours or even better, let it marinate (covered) in the fridge overnight.

Heat the grill to medium-high (about 400 degrees F). Clean and oil the grill grates.

Grill the chicken for about 5-7 minutes per side. Internal temperature of the chicken should reach 165 ºF. Let is rest for about 5 minutes. Then chop the chicken into bite size pieces and serve it on a bed of chopped romaine lettuce and add toppings like red onion, tomatoes, cucumber, greek yogurt sauce/Tzaziki, feta cheese, and mini pita bread.
