Big Batch Grilled Chicken Thighs

Ingredients

1 tablespoons avocado oil (or olive oil safe for high-temp cooking)
1/4 cup mayonnaise
3 tablespoons lemon juice (freshly squeezed)
2 tablespoons honey
1 tablespoons low-sodium soy sauce
1 tablespoon garlic paste (or use freshly grated)
1 tablespoon smoked paprika
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon onion powder
3 pounds boneless skinless chicken thighs

Instructions

MAKE THE MARINADE:

In a blender, measure and add oil, (low-sodium) soy sauce, lemon juice, mayonnaise, honey, garlic paste (or freshly grated), smoked paprika, onion powder, kosher salt and black pepper. Secure the lid and blend until combined and smooth.

MARINATE THE CHICKEN:

Place boneless, skinless chicken thighs in a bowl or deep sided dish and pour the marinade over top. Toss well to coat. Let sit while you preheat your grill.

PREHEAT YOUR GRILL TO 400°F TO 450°F.

Once your grill has preheated, use tongs to place chicken, smooth side facing down onto the hot grates. Close the lid and grill for 4 minutes. After 4 minutes, use tongs to flip the chicken and continue to grill 3 to 4 minutes more or until fully cooked. Once cooked, remove and transfer to a cutting board or pan and let rest for 5 minutes before serving.

Either serve immediately or let cool and store in an air-tight container for up to 4 days.
