Instructions

Crack and add the eggs into a bowl or large liquid measuring cup. Whisk well until combined and set off to the side.

In a 10-inch skillet, add olive oil, sausage crumbles (if using pre-cooked turkey sausage) and jalapeño pepper. If you cooked the sausage yourself, you can omit adding it here.

Over medium to medium-low heat, cook for 8 minutes or until the onion is tender and the sausage is golden brown in spots. Once cooked, transfer to a plate and set off to the side.

Reduce the heat under the pan to low and lightly spray with nonstick oil before pouring in the whisked eggs. Scrape the bottom of the pan with a spatula as the eggs cook.

Once the eggs are fluffy and cooked through, add in the sausage and onion mixture. Remove off the heat, add in the sliced green onion and stir to combine.

To warmed tortillas add 1/4 cup shredded cheese. Top the cheese with 1/4 of the egg and sausage mixture and a handful or so of crispy mini tater tots.

Fold in the top and bottom of the tortilla and roll to seal the burrito.

Place the burritos (seam-side down) on a small rimmed baking sheet and then lightly spray the tops with nonstick spray.

Air Fry: Preheat your air fryer to 360°. Depending on the size of your air fryer, work in batches, placing the burritos seam-side down in and even layer and air frying for 6 to 10 minutes or until the tortilla is a golden brown.orBroil: Move the oven rack to the highest position and preheat your ovens broiler to low. Broil until lightly golden. Watch carefully to avoid burning. You may want to (carefully) flip the burritos in order to crisp both sides.orPress: Preheat your panini press and work in batches "grilling" until golden brown.

Serve with desired toppings lis sour cream or plain nonfat greek yogurt, salsa or pico de Gallo ,guacamole and hot sauce.
