One Pot Creamy Mushroom Pasta

Ingredients

2 tablespoons olive oil
16 ounces sliced mushrooms
1 tablespoon minced garlic
1/2 teaspoon crushed red pepper flakes (or up to 1 teaspoon)
5 cups chicken broth
1 teaspoon salt
1 pound fettuccine
1 cup heavy cream
1 1/2 cups freshly grated Parmesan cheese

Instructions

Heat 2 tablespoons olive oil in a 6 quart pot over medium-high heat.

Add 16 ounces sliced mushrooms and cook 5 minutes, until mushrooms are softened and starting to brown.

Add 1 tablespoon minced garlic and 1/2 teaspoon crushed red pepper flakes and cook 60 seconds.

Pour in 5 cups chicken broth and season with 1 teaspoon salt. Add 1 pound fettuccine to the pot, submerging it into the liquid, breaking the pasta in half if necessary.

Cook, stirring regularly so the pasta doesn't get stuck to the bottom of the pan, for 10 minutes. Add 1 cup heavy cream and continue to cook for another 5 to 8 minutes until pasta is al dente and most of the liquid has been absorbed. Do not drain.

Turn off the heat and stir in 1 1/2 cups freshly grated Parmesan cheese until cheese is fully melted. Serve with additional salt and black pepper, to taste.
