Ingredients

¼ cup butter (unsalted)
8 ounces brown mushrooms (sliced)
1 small yellow onion (diced)
1 green bell pepper (diced)
2 tablespoons dry sherry (*, optional)
1 teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt (or to taste)
¼ cup all-purpose flour
2¼ cups turkey broth (or chicken broth)
½ cup half and half (or light cream)
1 cup frozen peas
1 (4 ounce) jar pimentos (drained and chopped)
3 cups cooked chopped turkey (or shredded)

Instructions

In a large 12-inch skillet, melt butter over medium-high heat. Add the mushrooms, onions, and bell pepper and cook until they begin to soften, about 5 minutes.

Add the sherry if using, and stir, cooking until most of the liquid is evaporated. Stir in the garlic powder, pepper, and salt.

Stir in the flour and cook for 2 minutes. While stirring, gradually add the turkey broth and cream. Turn the heat to a low simmer and cook, stirring occasionally, until the sauce has thickened, about 5 to 7 minutes.

Add the peas, chopped pimentos, and turkey, cooking until heated through, about 3 to 4 minutes.

Serve over pasta, rice, or biscuits.
