Apple Pie Granola

Ingredients

5 cups old fashioned rolled oats
1½ teaspoons apple pie spice
1 teaspoon kosher salt
1/2 cup unsalted butter
1/2 cup dark brown sugar
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1½ teaspoons pure vanilla extract
1/8 teaspoon almond extract
2 cups chopped dehydrated apple (or unsweetened apple chips (see notes))

Instructions

PREHEAT YOUR OVEN TO 350°F (OR 180°C).Line a large rimmed baking sheet with parchment paper.

In a large bowl, measure and add in oats, apple pie spice and salt. Stir and set off to the side.

In a saucepan, measure and add butter, brown sugar, maple syrup and melted coconut oil. Heat over medium-low and stir until the sugar dissolves. Remove off of the heat and stir in vanilla extract and almond extract.

Pour the maple butter mixture into the bowl with the oats. Toss well to combine. Lastly, add in dehydrated apples. And toss to combine.

Add all of the apple and oat mixture to the prepared pan. Spread evenly and bake for 10 minutes. Remove, stir and spread back out and back for an additional 10 minutes or until the edges are lightly golden. Watch carefully to avoid burning! Remove and let the granola cool completely on the pan before storing.
