Ingredients

2 1/4 cups (280g) all-purpose flour
2 ½ tsp (10g) baking powder
½ tsp (3g) salt
2 tbsp (30g) sugar
7 oz (200g) Greek yogurt
1 large egg
¼ cup (56g) melted butter
1 tsp (5g) vanilla extract
1 pound (450g) apples (, about 3 medium apples, peeled and cored)
3 tbsp (45g) brown sugar
1 tsp (3g) cinnamon
2 tsp (10ml) lemon juice
1 tbsp (10g) cornstarch or flour
1 egg (, beaten)

Instructions

Prepare the apples.

Peel, core, and cut the apples into small pieces.

Add the apples, brown sugar, cinnamon, lemon juice, and cornstarch to a large bowl.

Toss to combine.

Prepare the dough.

In a large bowl, whisk together the flour, baking powder, sugar and salt.

Add Greek yogurt, egg, melted butter, and vanilla and mix until smooth.

Don't overmix. If the dough feels very sticky, add a little more flour, 1 tablespoon at a time.

Cover and let it rest for about 1015 minutes. This will make it easier to roll and shape.

Shape and bake.

Transfer the dough to a floured surface.

Divide the dough into 10 equal pieces.

Roll each piece into a ball.

Working with one piece at a time, on a floured surface, flatten or roll the dough into a circle.

Place a generous spoonful of apple filling in the center, leaving a border around the edges.

Bring the edges of the dough up around the filling.

Pinch firmly to seal.

Turn the bun seam-side down and gently shape it into a round bun. Place the buns on a parchment-lined baking sheet.

Brush with beaten egg.

Sprinkle brown sugar on top.

Bake at 350°F (180°C) for about 2025 minutes, or until lightly golden.
