Ingredients

2 tbsp (30g) olive oil
2 pounds (1kg) mushrooms (cremini, button, or mixed) ( , sliced)
2 medium onions (, chopped)
1 garlic clove (, minced)
2 tsp (6g) paprika
3 cups (720g) vegetable stock
¼ tsp (1g) ground black pepper
3 tbsp (24g) cornstarch
¼ cup (60ml) milk
Fresh parsley
salt (, to taste)

Instructions

Cut the mushrooms into thin slices and chop the onion.

Heat the olive oil in a large skillet or pot over medium heat.

Add the chopped onions and cook for 45 minutes, until softened.

Add the minced garlic and cook for about 30 seconds, until fragrant.

Add the sliced mushrooms.

Cook, stirring occasionally, until they release their liquid and most of it has evaporated, about 1015 minutes.

Add the paprika and stir well.

Cook for about 30 seconds, just until fragrant.

Pour in 3 cups of vegetable stock and add the black pepper. Stir to combine.

Bring to a boil, then reduce the heat, cover and simmer for about 510 minutes. Add more stock as needed to reach your desired consistency.

In a small bowl, whisk together the cornstarch and milk until completely smooth. Slowly pour the cornstarch mixture into the simmering mushrooms, stirring constantly.

Cook for 23 minutes, or until the stew thickens.

Remove from the heat and stir in the fresh parsley. Taste and season with salt as needed.

Serve warm.
