Instructions

Preheat the oven to 350°F (180°C). Grease an 8-inch (20 cm) square pan and line it with parchment paper, leaving some overhang on the sides for easy removal.

Blend the cottage cheese in a blender or food processor until completely smooth and creamy, with no visible curds.

Transfer the blended cottage cheese to a large mixing bowl. Add the Greek yogurt, eggs, honey or maple syrup, and vanilla extract.

Whisk until smooth and well combined.

Add the dry ingredients, oat flour, salt, and baking powder.

Mix until just combined and no dry spots remain.

Toss 1 cup (150g) of the mixed berries with 1 tablespoon of oat flour. This helps prevent the berries from sinking too much into the batter.

Fold the coated berries gently into the cottage cheese mixture, taking care not to crush them.

Pour the mixture into the prepared pan and spread it evenly.

Scatter the remaining ¾ cup (75g) mixed berries over the top.

Bake for 4550 minutes until set and lightly golden.

Cool completely.

Once cooled, cut into bars.
