Pineapple Coconut Bars

Ingredients

1 20 ounce can of Pineapple tidbits, drained well
1/2 cup of shredded coconut (sweetened or unsweetened, your choice)
1/2 cup of butter (melted)
2 eggs
1/4 teaspoon of baking soda
1 cup of flour
3/4 cup of sugar
top with powdered sugar

Instructions

Preheat the oven to 350 degrees. In a large bowl, add sugar, eggs and butter and mix well with the mixer, next add in flour and baking soda and mix until combined.

Fold in coconut and pineapple and pour into a greased 8X8 pan.

Cook for 28-33 minutes, until the center comes out clean. Let cool and sprinkle with powdered sugar.
