Ingredients

1 1/2 pounds pork tenderloin
2 tablespoons extra virgin olive oil
2 tablespoons brown sugar (light or dark)
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon whole grain mustard

Instructions

Cut 1 1/2 pounds pork tenderloin into sections to fit your air fryer, if needed. Place in a shallow dish or resealable plastic bag.

Add 2 tablespoons extra virgin olive oil, 2 tablespoons brown sugar, 1 tablespoon lemon juice, 1 tablespoon white wine vinegar, 1 tablespoon garlic powder, 2 teaspoons salt, 1 teaspoon black pepper, and 1 teaspoon whole grain mustard to the pork. Mix well to coat evenly.

Cover or seal and marinate in the refrigerator for at least 4 hours or up to 24 hours.

Preheat the air fryer to 400 degrees Fahrenheit (204 degrees Celsius) for 5 minutes.

Remove the pork from the marinade and discard the marinade.

Place pork pieces in the air fryer basket in a single layer. Cook at 400 degrees Fahrenheit (204 degrees Celsius) for 10 to 15 minutes, flipping halfway through, or until an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius) is reached.

Remove the pork from the air fryer and let rest for 5 minutes. Slice and serve warm.
