Homemade Blueberry Syrup

Ingredients

16 ounces blueberries (fresh or frozen)
1 cup granulated sugar
1/2 cup water
1 tablespoon lemon juice
1/2 teaspoon vanilla extract

Instructions

In a medium-size saucean, stir together 16 ounces blueberries, 1 cup granulated sugar, 1/2 cup water, and 1 tablespoon lemon juice and place over medium-high heat.

Slowly bring the mixture to a boil, stirring occasionally. Once boiling, reduce the heat to low and let it simmer for 10 minutes, continuing to stir occasionally.

After 10 minutes, remove the saucepan from the heat. Add in 1/2 teaspoon vanilla extract and stir to combine.

Serve the syrup over pancakes and waffles, ice cream, or as a topping for cheesecake.
