Fresh Peach Cobbler

Ingredients

5 cups fresh peaches (peeled and sliced)
2 tablespoons cornstarch
3/4 cup brown sugar
1/2 cup water
2 tablespoons butter or margarine
2 tablespoons lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
3 tablespoons butter or margarine (melted)
1 egg
5 tablespoons milk

Instructions

Mix together cornstarch, brown sugar, water, butter and lemon juice.  Add peaches.  Cook in a saucepan on top of the stove until thickened.  Pour into a round 2 quart baking dish that has been sprayed with cooking spray.

Topping Instructions

Beat till smooth with whisk.  Drop by spoonfull over peaches and spread evenly. Can sprinkle batter with sugar. Bake in preheated 400 degree oven for 35 to 40 minutes.
