Ingredients

¼ cup salted butter
1 small yellow onion (diced)
8 ounces wide egg noodles
8 ounces cottage cheese
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper
sour cream (for serving, optional)

Instructions

Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions. Drain but do not rinse, add the pasta back to the pot and set aside.

Meanwhile, in a medium skillet, melt the butter over medium heat. Add the onion and cook until softened and it begins to brown slightly, about 10-12 minutes.

Add the onion to pasta along with cottage cheese, salt, and pepper. Cook over medium heat until the sauce is heated through.

Serve with a dollop of sour cream and garnish with parsley if desired.
