Blueberry Lemon White Wine Spritzer

2 cups fresh blueberries
1 lemon rinds
1 cup lemon juice (freshly squeezed )
24 ounces sparkling water (or more as neede,I like Topo Chico)

Instructions

MAKE THE WHITE WINE SPRITZER:

In a saucepan, measure and add 1 cup white wine (I use sauvignon blanc) and 1/4 cup sugar. Heat over medium, stirring until the sugar dissolves. Remove and let cool before pouring into a jar or container with a tight fitting lid.Refrigerate until ready to use.

MAKE THE BLUEBERRY LEMON MIXTURE:

In a sauce pan, measure and add 2 cups fresh blueberries and the zest from a large lemon. Pour in 1 cup freshly squeezed lemon juice. Bring to a low boil over medium to medium-high heat, stirring occasionally, for 6 to 8 minutes or until the berries soften and burst.

Remove and let cool. I like to speed this process up by adding ice and cold water to a large bowl (about 1/3 to 1/2 way depending) and setting the pan inside.Once cooled, remove all of the lemon rinds and discard.

Transfer the cooled lemon blueberry mixture to a blender and puree until smooth. Never puree hot liquids!

Place a mesh strainer on top of a large liquid measuring cup and strain the blueberry lemon mixture. Once strained, pour it into a pitcher. Pour in all of the white wine syrup and stir to combine.

MAKE THE SPRITZER:

Fill glasses to the top with ice. Fill the glass halfway with the blueberry wine mixture and top off with sparkling water.

Garnish with fresh mint sprigs and lemon wheels if desired.
