Ingredients

1/4 cup vegetable oil
3/4 cup granulated sugar
3/4 cup buttermilk (room temperature)

Preheat oven to 350 (175). Line a 12-cup muffin tin with paper cupcake liners.

In a large mixing bowl, using a hand mixer to beat 1/4 cup salted butter, 1/4 cup vegetable oil, and 3/4 cup granulated sugar on medium speed until light and fluffy, about 2 to 3 minutes.

Add 3/4 cup buttermilk, 2 large eggs, and 2 teaspoons vanilla extract to the bowl. Beat on a low speed until fully combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed.

Add 1 3/4 cups all-purpose flour, 2 teaspoons baking powder, and 1/4 teaspoon salt directly to the bowl. Mix on low speed until just combined. Do not overmix. Scrape the bowl to ensure everything is incorporated.

Divide the batter evenly among the cupcake liners, filling each about halfway full.

Bake for 14 to 18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove the cupcakes from the pan and place on a wire rack. Cool completely before frosting.
