Ingredients

2 large eggplants (about 1 ½ lbs in total)
¼ cup tahini
¼ cup fresh lemon juice
1 clove garlic (minced)
3 tablespoons chopped fresh parsley
½ teaspoon salt (or to taste)
1 tablespoon olive oil
red pepper flakes (to taste)

Instructions

Preheat oven to 400°F.

Poke eggplant with a fork and bake directly on the rack until tender, about 45-50 minutes.

Cool and peel the eggplant.

In a food processor or blender, place eggplant, tahini, lemon juice, and garlic. Process until smooth.

Stir in parsley & salt. Top with olive oil and red pepper flakes.
