Cottage Cheese Blueberry Buns - Easy, Quick, No Yeast and No Refined Sugar

Ingredients

14 oz (400g) cottage cheese
2 eggs
1 tsp (5g) vanilla extract
2 ½ tbsp (50g) honey
1 cup (170g) all-purpose flour
2 tbsp (30g) semolina
1 ½ tsp (6g) baking powder
1/2 tsp (2g) salt
1/2 cup (120g) Greek yogurt, 10% fat
1 tbsp (20g) honey
fresh or frozen blueberries

Instructions

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper and set aside.

Blend the cottage cheese until smooth and creamy.

Transfer it to a mixing bowl. Add the eggs, honey, and vanilla extract to the blended cottage cheese. Mix until well combined.

Add the flour, semolina, baking powder, and salt.

Mix until everything is well incorporated and a soft, sticky dough forms.

Shape the buns.

Using a spoon, scoop the mixture onto the prepared baking sheet, leaving some space between each one. You should get 8 buns.

Using the back of a spoon, slightly wet, gently press a well into the center of each bun.

Prepare the yogurt topping.

In a small bowl, mix the Greek yogurt with honey until smooth.

Spoon the yogurt mixture into the wells of each bun.

Add the blueberries on top of the yogurt, gently pressing them in slightly.

Bake for about 30-35 minutes, or until the buns are golden and cooked through.

Let them cool for a few minutes before serving. Dust with no-refined powdered sugar if desired. Enjoy!
